3 hectares of vines planted in 2019 and the old Pas de L'Estang vineyard. Organic farming, with a low yield objective (35hL/ha). Hand-harvested and vinified in the village.

We decided to set up a winery in the village of Saoû to vinify the 2022 harvest.
Our first bottles were ready in spring 2023.

A simple, traditional vinification, respectful and controlled to best express the identity of the terroir and grape varieties.
