La Raviole de Saint-Jean
Ravioles de Saint-Jean, a gourmet tradition in the Vercors region of Drôme for over 85 years. A true culinary emblem of the region, these delicious little stuffed pastas appeal to gourmets and lovers of simple flavors alike.
Much more than a simple dish, ravioles de Saint-Jean are the symbol of a precious culinary heritage and a tradition that has endured through the ages. Originating in Saint-Jean-en-Royans, in the heart of the Drôme and Vercors regions, these little squares of jagged pastry have been made for over 85 years, perpetuating a know-how handed down from generation to generation. Originally, this delicious delicacy was reserved for festive days and special occasions, reflecting the richness of moments shared as a family. Each Royans family had its own secret recipe, making each raviole a unique story.
Introduced in the 18th century and quickly becoming a regional specialty, Royans ravioles have conquered palates far beyond their native land. Their fine pastry, made exclusively from soft wheat flour, envelops a delicate cheese and parsley filling, which has seduced even the royal courts. In the 19th century, a woman from Royans, renowned for her incomparable ravioles, was invited to Paris to present her signature dish. Such was her success that the fame of Royans ravioles spread beyond the borders of our beautiful region, highlighting our gastronomic heritage.
The success of ravioles de Saint-Jean is based on the quality of carefully selected local ingredients. Made with Comté PDO, Drôme parsley and free-range eggs, they are the only ravioles to have been awarded the Label Rouge since 1998 and the IGP since 2009, guaranteeing their superior quality and authenticity. Protected by an Indication Géographique Protégée (IGP), ravioles du Royans are now recognized for their excellence and their attachment to their roots.
Easy to cook, ravioles lend themselves to every taste: poached in water, au gratin, in salads or even as tapas. Fresh or frozen, they offer a multitude of possibilities for convivial, gourmet meals all year round. Ravioles de Saint-Jean are much more than just a dish; they are the living testimony of a culinary heritage that combines tradition, innovation and French excellence, celebrating the richness of our gastronomic heritage every day.
